Coca-Cola Product Recipes 

 


 

Congratulations to Audrey, Sandy, and Jane for their Coca-Cola recipes at the last meeting. Try these wonderful recipes!


Audrey's Coca-Cola Meetballs
Best use of Coca-Cola
Rice Meat Balls (makes 18 meatballs)

Combine, mix lightly, shape into balls, place in skillet:
pound ground beef

1 cup minute rice
1 egg
1 small onion chopped
2 tps. salt or substitute
dash of pepper
½ cup tomato juice

Combine:
2 cups tomato juice
1 t sugar or substitute
Pour juice over meatballs and bring mixture to a boil. Reduce heat, cover
and simmer for 1 hour, basting occasionally.

I double and triple this recipe and generally end up using my electric and
another skillet. Covering with 1 or 2 46 oz cans of tomato juice. To
season and thicken I simmer at least 2 hours. This time I substituted some
of the tomato juice with Coca-Cola




Sandy's Lemon Pie

Quick and Easy Lemonade Pie
1 graham cracker crust
1 8oz container Cool Whip
1 6oz container of Minute Made Lemonade concentrate
1 can of sweetened condensed milk

Mix lemonade, condensed milk, and cool whip together. Pour into crust. Chill. Garnish w/ crushed graham crackers before serving.
Enjoy!


Jane's Cucumbers

Summer Cucumbers 

Slice two or three medium size cucumbers into a serving bowl and add 2 Tbsp
chopped onion
 
Combine: 
1 Cup Sprite
1 1/3 cup vinegar and 1 ½ Tbsp sugar
 
Stir to dissolve sugar
 
Pour Sprite mixture over sliced cucumbers and onions and stir.  Liquid should cover cucumbers.  Place in frig for a few hours so the flavors combine.
 
Serve and enjoy ;0)

Coca Cola Pork Chops

Servings: 6

2 tablespoons oil

6 pork chops

1 cup ketchup

1 cup coca cola

In skillet add oil and brown pork chops on both sides.

Add ketchup and Coca Cola.

Cook on low heat for 35 minutes.

 

Colombian Fresh Banana Cake
With Sea Foam Frosting

 


Ingredients:

Cake:
1 Pkg (18.5 oz) yellow Cake mix **
1/8 ts Baking soda
2 Eggs
3/4 c COCA-COLA
1 c Bananas, ripe and mashed
2 ts Lemon juice
1/3 c Nuts, finely chopped (opt)

SEA FOAM FROSTING
2 Egg whites
1 1/2 c (firmly packed) light
Brown sugar
1/8 ts Cream of tartar *
1/3 c COCA-COLA
1 ts Vanilla extract
Dash salt

* Do not use a mix with pudding added or which requires oil.
* You may substitute 1 tablespoon corn syrup.

TO MAKE THE CAKE:
In a large mixing bowl, combine the cake mix, baking soda, and eggs. Measure the Coca-Cola, stir briskly until the foaming stops; add to the batter. Blend ingredients just until moistened, then beat at high speed of an electric mixer for 3 minutes, scraping the bowl often.
In a bowl, combine the mashed bananas with the lemon juice; add to the batter. Add the chopped nuts to the batter and beat for 1 minute at medium speed. Turn the batter into a well-greased, lightly floured, 13x9x2-inch pan.
Bake in a preheated, 350 degree F oven for about 40 minutes or until the cake tests done. Cool on a rack for 15 minutes, remove cake from pan and turn right-side up on a rack to finish cooling.

TO MAKE THE SEA FOAM FROSTING:
In the top of a double boiler, combine all the ingredients except the vanilla extract. Beat 1 minute at high speed of an electric mixer. Place over boiling water (the water should not touch the bottom of the top half of the double boiler.). Beat on high speed about 7 minutes until the frosting forms peaks when the mixer is raised.
Remove from boiling water (for the smoothest frosting, empty into a large bowl). Add the vanilla extract and continue beating on high speed until thick enough to spread, about 2 minutes. Spread on the sides and top of the cold banana cake.

Coca Cola Pear and Cream Cheese Salad
2 pkg. (3 oz.) lemon Jello
1 large can pear halves (14-1/2 ounces)
1 c. boiling water
3 c. Cola Cola

DRESSING:
1 pkg. (8 oz.) cream cheese
8 lg. marshmallows cut in 1/8th or 1 c. mini marshmallows
1/2 c. whipping cream

Instructions:
Dissolve Jello in boiling water. Then add Coke. Arrange pear halves in a 9 x 13 inch pan. Pour in a bit of Jello mixture and refrigerate until set. Then add the rest of the Jello and refrigerate until all is set.

Place dressing ingredients in bowl and refrigerate overnight (combined). When time to serve, whip. Cut Jello in squares and place on small salad plates and put a dollop of dressing on each square.

                  
Coca Cola Meatloaf
2 pounds ground beef
1 egg
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1/2 cup ketchup
1/4 to 1/2 cup Coca Cola
1 cup or more Italian bread crumbs

Instructions
Mix all ingredients together; shape into loaf. Bake at 350 degrees for 45-60 minutes.



Mike mentioned at the meeting that they tried the Crock Pot Roast recipe, and said it was really good!  They highly recommend it.


                               
Crock Pot Roast
1 sirloin tip roast or boneless chuck roast
1 can Coca Cola
1 med. cut up onions
15 oz. can sm. whole potatoes
15 oz. can fingerling carrots or
sliced carrots
4 oz. can chopped mushrooms


Instructions
Wash meat and place in crock pot; add onion and Coke and salt and pepper to taste. Cook on high for 6-8 hours. In last hour, add potatoes, carrots, and mushrooms and let entire meal cook at least another hour. Meat should fall apart. If you want to cook it on low, it will take around 12 hours. For leftovers, add tomatoes, corn, celery, beans; whatever. Add a gravy mix and you have a good stew or soup.
